PANAMA CITY, FL – On the Go Oyster is a mobile oyster and seafood bar originating from and based in Panama City. Founded three years ago by Dwayne Hutchinson and Mike Hentschel, their business has taken them out of state and across the Gulf Coast.
On the Go Oyster was created out of a lifelong career in seafood. Hutchinson himself has had experience shucking oysters since he was 12 years old, helping with his family’s seafood business. He continued to work with oysters and even placed highly in several oyster shucking competitions, including one held at the Florida Seafood Festival.
The business model of a mobile oyster bar came from Hutchinson and Hentschel repeatedly being asked by friends to shuck oysters for events. It happened frequently enough that they had the idea of turning it into a business. Kelsey Hutchinson, the wife of Dwayne, was brought on to manage the business’s finances. Both were born and raised in Panama City.
On the Go Oyster offers a variety of menu items and flavors to clients. Two of their signature oyster flavors are brown butter roasted garlic and bourbon bacon peach. They also serve a variety of seafood besides oysters, including locally sourced shrimp, snow crab legs, and crawfish.
