Easy Risotto
INGREDIENTS:
1 small onion, chopped (1/3 cup)
2 cloves of garlic, minced
1 tablespoon butter
2/3 cup Arborio Rice
2 cups chicken broth
black pepper to taste
1/4 cup Parmesan Romano cheese
Rosemary sprig or chopped basil (optional)
DIRECTIONS
1. Melt butter in a medium saucepan.
2. Add onion, sauté 2 mins. Add garlic sauté 1 minute.
3. Add Arborio rice, then cook and stir for 2 minutes more at med heat.
4. Stir in broth, add pepper.
5. Bring to a boil; reduce heat, cover, and simmer for 20 minutes (don't lift the lid!)
6. Remove saucepan from heat and let stand, covered, for 5 minutes. Rice should be creamy and al dente. *Can add warm water if needed to achieve creaminess
7. Stir in Parmesan Romano cheese.
