Bay County Cook Shares Recipe: Peach Cobbler Bars
Peach Cobbler Bars
Ingredients
1 cup old-fashioned oats 3/4 cup all-purpose flour 1/2 cup light brown sugar + 1/4 to sprinkle on top before baking
1 1/4 tsp cinnamon 1/4 tsp baking soda 1/4 tsp kosher salt 6 Tlb melted unsalted butter
1/2 tsp lemon juice
1 1/4 tsp vanilla extract
2 cups diced ripe peaches + thinly sliced for top (2-3 medium peaches)
2 Tlb granulated sugar
1 Tlb cornstarch
1 1/4 tsp cinnamon 1/4 tsp baking soda 1/4 tsp kosher salt 6 Tlb melted unsalted butter
1/2 tsp lemon juice
1 1/4 tsp vanilla extract
2 cups diced ripe peaches + thinly sliced for top (2-3 medium peaches)
2 Tlb granulated sugar
1 Tlb cornstarch
Directions
1. Preheat oven to 375oF.
2. Line 8" square baking dish with parchment paper or use nonstick spray.
3. In a large bowl, combine oats, flour, brown sugar, cinnamon, baking soda, and salt. 4. Stir in melted butter, lemon juice and vanilla until mixture becomes crumbly.
5. Remove and set aside 1/2 cup of mixture for topping. Use fingers
to firmly press remaining mixture into bottom of pan.
6. In another bowl, mix diced peaches with sugar and
cornstarch. Spread mixture evenly over crust.
7. Sprinkle reserved oat mixture over peaches.
8. Lay sliced peaches over top of mixture and sprinkle with 1/4 cup brown sugar.
9. Bake 30-375 minutes until topping is golden brown and peaches are bubbly.
10. Allow to cool completely before cutting.
11. As always, make it pretty!
